Ingredients
- 1 cup unsweetened almond milk
- 2 tbsp tahini
- 2 tbsp heavy cream
- 1 tbsp MCT oil
- 1 shot espresso (or 1/3 cup strong coffee), cooled 2–3 minutes
- 1–2 tbsp powdered erythritol or allulose, to taste
- 1/4 tsp alcohol-free caramel flavor (plus 1/4 tsp alcohol-free vanilla, optional)
- Big pinch fine sea salt
- 1–1½ cups ice
- Optional garnish: pinch of sesame seeds or cinnamon
Instructions
- Brew 1 shot espresso (or 1/3 cup strong coffee) and let it cool for 2–3 minutes.
- To a blender, add almond milk, tahini, heavy cream, MCT oil, the cooled espresso, sweetener, caramel flavor (and vanilla, if using), sea salt, and ice.
- Blend on high until creamy and frosty, 20–30 seconds. If too thick, splash in more almond milk; if too thin, add a few ice cubes and pulse.
- Taste and adjust sweetness or salt. Pour into a tall glass and garnish with sesame seeds or cinnamon, if desired.

- Extra thick: Add more ice or 1/8 tsp xanthan gum and blend well.
- Decaf option: Use decaf espresso for an evening treat.
- Protein boost: Add 1 scoop unflavored collagen or whey isolate; thin with a splash of almond milk if needed.
