Ingredients

  • 1 cup unsweetened almond milk
  • 2 tbsp tahini
  • 2 tbsp heavy cream
  • 1 tbsp MCT oil
  • 1 shot espresso (or 1/3 cup strong coffee), cooled 2–3 minutes
  • 1–2 tbsp powdered erythritol or allulose, to taste
  • 1/4 tsp alcohol-free caramel flavor (plus 1/4 tsp alcohol-free vanilla, optional)
  • Big pinch fine sea salt
  • 1–1½ cups ice
  • Optional garnish: pinch of sesame seeds or cinnamon

Instructions

  1. Brew 1 shot espresso (or 1/3 cup strong coffee) and let it cool for 2–3 minutes.
  2. To a blender, add almond milk, tahini, heavy cream, MCT oil, the cooled espresso, sweetener, caramel flavor (and vanilla, if using), sea salt, and ice.
  3. Blend on high until creamy and frosty, 20–30 seconds. If too thick, splash in more almond milk; if too thin, add a few ice cubes and pulse.
  4. Taste and adjust sweetness or salt. Pour into a tall glass and garnish with sesame seeds or cinnamon, if desired.
