Sushi-style egg wraps loaded with creamy avocado and smoked salmon, finished with a bold chili–sesame butter. These grain-free breakfast rolls are ultra satisfying and come together in minutes.
Ingredients
Chili–Sesame Butter
- 2 tbsp salted butter, softened
- 1 tbsp toasted sesame seeds
- 1/2 tsp red pepper flakes (to taste)
- 1/2 tsp lemon zest
- Pinch of salt
Wraps
- 4 large eggs, whisked with a pinch of salt
- 1 tsp butter or avocado oil (for the pan)
- 2 nori sheets
- 4–6 oz smoked salmon
- 1 ripe avocado, thinly sliced
- Fresh lemon wedges, chives, or extra sesame seeds for serving (optional)
Instructions
- Make the chili–sesame butter: In a small bowl, mash softened butter with toasted sesame seeds, red pepper flakes, lemon zest, and a pinch of salt. Set aside.
- Cook the egg wraps: Heat a nonstick 8–10 inch skillet over medium and lightly grease. Pour in half the whisked eggs, swirling to form a thin crepe. Cook 30–45 seconds per side until just set. Repeat with remaining eggs to make 2 egg wraps.
- Assemble: Place a nori sheet shiny side down. Spread half the chili–sesame butter, top with one egg wrap, half the smoked salmon, and half the avocado. Add a squeeze of lemon if you like. Roll tightly from the short edge. Repeat with the second sheet.
- Optional crisp: Return the rolls to the hot skillet seam-side down for 15–30 seconds to gently crisp the nori. Slice each roll into 5–6 pieces.
- Serve: Garnish with extra sesame seeds or chopped chives and enjoy right away.
