Ingredients

  • 1/2 cup full-fat Greek yogurt
  • 1/4 cup coconut cream
  • 1/2 cup unsweetened almond milk (reserve 2 tbsp to warm)
  • 8–10 saffron threads
  • 1/4 tsp ground cardamom (plus a pinch for garnish)
  • 1–2 tbsp erythritol or monk fruit sweetener, to taste
  • Pinch of sea salt
  • Ice (optional, for extra froth)

Instructions

  1. Warm 2 tablespoons of almond milk and bloom the saffron threads for 5 minutes until the color releases.
  2. Add to a blender: Greek yogurt, coconut cream, remaining almond milk, the saffron milk, sweetener, ground cardamom, and a pinch of sea salt.
  3. Blend on high for 20–30 seconds until silky and lightly frothy. Add a handful of ice if you prefer it extra cold and creamy.
  4. Taste and adjust sweetness or cardamom. If too thick, add a splash more almond milk; if too thin, blend in another spoon of yogurt or coconut cream.
  5. Pour into a chilled glass and garnish with a tiny pinch of cardamom or a few saffron strands. Serve immediately.
