  4. Cool on the pan 3 minutes to set, then transfer crisps to a rack to cool completely and turn ultra-crispy.
  5. Meanwhile, beat softened cream cheese with lemon zest and finely chopped chives until fluffy. If needed, loosen with 1–2 teaspoons olive oil or a splash of water.
  6. Pipe or spoon a small dollop of the chive cream onto each cooled crisp right before serving. Garnish with extra chives or seasoning if you like.
  7. Serve immediately. Store plain crisps airtight up to 3 days; add the topping only when serving to keep them crisp.
